Delicious Scone Recipe for Australia Day

Scones with lemon curd and ricotta

It wouldn’t be Australia Day without enjoying some classic Aussie grub. Last year we shared our low-calorie Lamington - so this year we thought we’d share our mouthwatering, healthy Aussie scone recipe to spoil our nation’s tastebuds.

These scones are the perfect way to celebrate Australia Day – and at around 150 calories per serve – they can be enjoyed without the guilt. Plus, they’re easy to transport if you’re heading to a BBQ or picnic – just pack the curd and ricotta separately.

SCONES 12 Serves I 15 min prep time I 10 min cooking I 153 calories per serve

Ingredients

1¼ cups Self-Raising flour (190g)
½ cups Plain wholemeal flour (80g)
½ teaspoons Baking powder (1g)
1 tablespoons Sugar (5g)
40g Margarine ¾ cups Low-fat milk (160g)
180g reduced-fat ricotta 2 teaspoons of icing sugar (6g)
1/3 cups passionfruit curd (85g)

Method

  1. Preheat oven to 200C (fan-forced). Line a baking tray with non-stick baking paper.
  2. Sift the flours and baking powder into a medium bowl. Add the sugar and Margarine. Using your fingertips rub the margarine in until the mixture resembles breadcrumbs. Make a well in the centre. Add the milk and using a flat-bladed knife mix until dough just starts to come together. Turn out onto a lightly floured surface and bring to together to form a ball.
  3. Roll out the dough until about 1.5cm-thick. Using a 5cm round cutter, cut out the scones. Place the scones on the prepared tray, almost touching. Brush the tops with a little extra milk or water. Bake for 10 minutes or until scones are light golden and cooked through.
  4. Place the ricotta and icing sugar in a small bowl. Pulse with a stick mixer until smooth and creamy or use a food processor if you like.
  5. To serve, split each scone in half. Top each half with a little curd and a dollop of creamy ricotta. Serve and enjoy.

An oldie but a goodie, it doesn’t get much more Aussie than playing cricket in the backyard. Grab your green wheelie bin as makeshift stumps.

Beach cricket

Beach Frisbee
You don’t have to be by the beach, but it helps! Throwing the Frisbee around with your family is fun, and will have you working up a sweat.
